Don Oechsle

Don Oechsle is a qualified cheesemaker. He has never been to Switzerland, but knows that the cheese that is sold and eaten in the US has little in common with the cheese made by his ancestors from Einsiedeln.

Now he wants to introduce US consumers to a cheese product made from raw milk from Einsiedeln Abbey. René Schönbächler from Einsiedeln is helping him with his plan, but is also struggling with the difficult export restrictions.
